Incognito Mode sounds much more powerful than it is. It mainly changes what your browser stores locally; a VPN protects traffic across the network.
The name suggests sunglasses, a fake passport and nobody knowing where you are. In reality, the main job of Incognito or Private Browsing is much simpler: avoid keeping the normal browsing session on the device after the private window is closed.
It is useful on a shared computer, for temporary sign-ins, testing websites without normal cookies or keeping a browsing session out of the ordinary local history.
Those are real privacy benefits—but they are mostly about the browser on your device.
Incognito Mode does not create a private network tunnel. Your Wi-Fi, internet provider and the websites you visit still participate in the connection.
If the question is “Will this remain in my browser history?” private browsing helps. If the question is “What can the network carrying my traffic see?” you are asking about a different layer.

If someone else uses your computer later, Private Browsing can reduce the local history they find. If a website wants to recognize your signed-in account, neither Incognito Mode nor a VPN makes that account disappear. If your concern is the hotel, ISP or coffee-shop network carrying your connection, the VPN is the tool that changes that network path.
Once those three questions are separated—privacy on the device, identity at the website, and privacy across the network—the difference becomes much easier to understand. Incognito Mode is useful, but it is not a substitute for an encrypted network connection.
